Risotto Preparation

    Sauté the Base

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.

    Cook the Mushrooms

    Add the wild mushrooms to the skillet and cook until they are softened and browned, about 5-7 minutes.

    Toast the Rice

    Stir in the Arborio rice and cook for 2-3 minutes until the rice is lightly toasted.

    Add Wine and Broth

    Pour in the white wine and cook until it is mostly absorbed. Gradually add the broth, one ladle at a time, stirring frequently until absorbed before adding more.

    Finish the Risotto

    Once the rice is creamy and al dente (about 18-20 minutes), stir in the Parmesan cheese and season with salt and pepper to taste.

Lamb Chops Preparation

    Prepare the Lamb

    Preheat a grill or skillet over medium-high heat. Rub the lamb chops with olive oil, minced garlic, chopped rosemary, salt, and pepper.

    Cook the Lamb

    Grill or sear the lamb chops for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest the Lamb

    Remove the lamb from the heat and let it rest for a few minutes before serving.

Assembly

    Spoon the risotto onto plates and top with the lamb chops. Drizzle with any pan juices from the lamb and serve immediately.
