Ossobuco Preparation

Searing the Veal
In a large Dutch oven, heat olive oil over medium-high heat. Season the veal shanks with salt and pepper, then sear them on all sides until browned. Remove and set aside.

Deglazing
Pour in the white wine and scrape up any brown bits from the bottom of the pot. Let it simmer for about 2 minutes.

Braising
Return the veal shanks to the pot, add the beef stock, bay leaves, and thyme. Bring to a simmer, then cover and transfer to a preheated oven at 325°F (160°C). Braise for 2 to 2.5 hours until the meat is tender.
Risotto Preparation

Cooking Risotto
Add the Arborio rice and stir for 2 minutes. Pour in the white wine and cook until absorbed. Gradually add the stock, stirring frequently until the rice is creamy and al dente, about 18-20 minutes.

Finishing
Stir in the grated Parmesan cheese, and season with salt and pepper to taste.
Sautéed Broccoli Rabe Preparation

Cooking Broccoli Rabe
In a skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for 30 seconds. Add broccoli rabe and sauté until tender, about 5-7 minutes. Season with salt.
