Mushroom Crouté Preparation

    Prepare the Mushroom Mixture

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add chopped mushrooms, salt, and pepper, cooking until mushrooms are soft. Stir in fresh parsley and breadcrumbs, mixing well. Set aside.

Salmon Preparation

    Prepare the Salmon

    Preheat the oven to 200°C (400°F). Season salmon fillets with lemon juice, Dijon mustard, salt, and pepper. Place on a baking sheet and top each fillet with the mushroom mixture.

Roasted Potatoes Preparation

    Roast the Potatoes

    In a bowl, toss halved baby potatoes with olive oil, rosemary, salt, and pepper. Spread on a baking sheet and roast in the oven for 25-30 minutes or until golden brown.

Vegetables Preparation

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add zucchini, bell peppers, and carrots. Season with salt and pepper, cooking for 5-7 minutes until just tender.

Final Assembly

    Once everything is cooked, place roasted potatoes and sautéed vegetables on a plate alongside the mushroom crouté salmon. Serve immediately.
