Bone Marrow

Method

Preparing Bone Marrow

  1. 1

    Roasting the Bone Marrow

Preheat the oven to 450°F (230°C). Place the beef bone marrow in a baking dish, cut side up. Season with sea salt and freshly ground black pepper. Roast in the oven for 15-20 minutes, or until the marrow is soft and begins to separate from the bone.

Making Gremolata

  1. 2

    Mixing Gremolata

In a bowl, combine the finely chopped parsley, minced garlic, lemon zest, and olive oil. Mix well and set aside.

Preparing Crostini

  1. 3

    Making Crostini

Brush the sliced baguette with olive oil on both sides. Toast in the oven at 400°F (200°C) for about 8-10 minutes until golden brown and crispy. Once toasted, rub the top of each crostini with the halved garlic cloves, then sprinkle with chopped fresh herbs.

Serving

  1. 4

    Assembling the Dish

Once the bone marrow is roasted, remove from the oven and let it cool slightly. Serve the marrow in the bones topped with gremolata alongside the garlic & herbs crostini for spreading.
