Method

Preparing the Mashed Potatoes

    Peel and chop the Yukon Gold potatoes into chunks. Place them in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Drain the potatoes and return them to the pot. Add minced garlic, butter, and a splash of milk. Mash until creamy. Season with salt and pepper to taste.

Cooking the Cod and Mushrooms

    Preheat the oven to 400°F (200°C).

    Season the cod fillets with salt and black pepper. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear the cod for 2-3 minutes on each side until golden brown.

    Transfer the skillet to the oven and roast the cod for about 10-12 minutes or until cooked through and flaky.

    In another skillet, heat the remaining olive oil over medium heat. Add the wild mushrooms and sauté until they are browned and tender, about 5-7 minutes. Season with salt and pepper.

Preparing the Marmalade Reduction

    In a small saucepan, add the marmalade and a splash of water. Heat over low heat, stirring until it becomes a smooth sauce. Adjust consistency with more water if needed.

Serving

    To serve, place a generous scoop of mashed potatoes on the plate, top with the roasted cod, and spoon sautéed wild mushrooms over the top. Drizzle the marmalade reduction around the plate and garnish with fresh parsley.
