Method

Gnocchi Preparation

  1. 1

    Make the Gnocchi Dough

In a large bowl, combine ricotta, flour, egg, and salt. Mix until a soft dough forms. If the dough is too sticky, add more flour as needed.

  2. 2

    Shape the Gnocchi

On a floured surface, divide the dough into four pieces. Roll each piece into a rope about 1 inch thick, then cut into 1-inch pieces. Optionally, use a fork to create ridges on each piece.

  3. 3

    Cook the Gnocchi

Bring a large pot of salted water to a boil. Add the gnocchi in batches, cooking for about 2-3 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

Tomato Sauce Preparation

  1. 4

    Prepare the Sauce

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the San Marzano tomatoes, salt, and black pepper. Simmer for 15 minutes.

  2. 5

    Combine Gnocchi and Sauce

Add the cooked gnocchi to the sauce and gently toss to coat. Cook for an additional 2-3 minutes on low heat. Stir in fresh basil leaves before serving.
