Prepare the Potatoes

    Peel the potatoes and cut them into fries. Soak the fries in cold water for at least 30 minutes to remove excess starch.

    Drain the fries and pat them dry with paper towels. Heat the vegetable oil in a deep fryer or a heavy pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-6 minutes. Remove and drain on paper towels.

Cook the Filet Mignon

    Season the filet mignon steaks generously with salt and black pepper on both sides.
