    Prepare the Filling

    In a bowl, mix together the prosciutto, mozzarella, Parmigiano-Reggiano, basil, parsley, garlic, and black pepper. Set aside.

    Prepare the Veal Chops

    Using a sharp knife, make a pocket in each veal chop, being careful not to cut all the way through.

    Stuff the Chops

    Stuff each veal chop with the cheese and prosciutto mixture, securing the opening with toothpicks if necessary.

    Coat the Chops

    In a shallow dish, whisk the egg and season with a pinch of salt. Dip each stuffed chop into the egg mixture, then coat with bread crumbs.

    Bake the Chops

    Preheat the oven to 180°C (350°F). In a large oven-safe skillet, heat olive oil over medium heat. Sear the chops for about 3-4 minutes on each side until golden brown. Transfer the skillet to the oven and bake for 20-25 minutes, or until the meat is cooked through.
