    Prepare the Shallots

    Thinly slice the shallots and set aside.

Cooking the Veal

    Season the Veal

    Pat the veal chops dry with paper towels and season both sides with salt and black pepper.

    Sear the Veal

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the veal chops. Sear on each side for about 3-4 minutes, until a golden crust forms.

    Add Butter and Herbs

    Add butter and fresh herbs to the skillet. Tilt the skillet and baste the veal with the melted butter for another 2 minutes. Remove veal from skillet and let rest.

Frying Shallots

    Fry the Shallots

    In the same skillet, add the sliced shallots and cook until crispy, about 3-4 minutes. Remove and drain on paper towels.

Serving

    Plate the Dish

    Slice the veal chop and serve it topped with crispy shallots and drizzled with the natural juices from the skillet.
