Cavatelli Preparation

    Make the Dough

    In a large bowl, combine the flour and salt. Make a well in the center and add the egg and water. Mix with a fork until the dough comes together. Knead on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Form the Cavatelli

    Roll the dough into small pieces (about the size of a marble). Use a fork to shape each piece into cavatelli by pressing and rolling it against the tines.

Lamb Ragu Preparation

    Sear the Lamb

    In a large pot, heat olive oil over medium-high heat. Season the lamb with salt and pepper, then sear on all sides until browned, about 5-7 minutes. Remove and set aside.

    Sauté Vegetables

    In the same pot, add onion, carrot, and celery. Sauté until softened, about 5 minutes. Add garlic and cook for another minute.

    Add Remaining Ingredients

    Stir in tomato paste, then add red wine. Cook for 2-3 minutes until slightly reduced. Return the lamb to the pot, add broth and oregano. Bring to a simmer.

    Braised Ragu

    Reduce heat to low, cover, and cook for 1.5 to 2 hours until the lamb is tender. Shred the lamb and mix into the sauce. Adjust seasoning with salt and pepper.

Final Assembly

    Cook Cavatelli

    In a large pot of boiling salted water, cook the cavatelli until they float, about 3-4 minutes. Drain and toss with the ragu.

    Serve

    Drizzle with extra virgin olive oil, sprinkle with fresh herbs and grated asiago cheese before serving.
