    Prepare the Risotto

    In a saucepan, heat the chicken broth and keep it warm. In another large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent. Add Arborio rice, stirring for 1-2 minutes. Gradually add warm chicken broth, one ladle at a time, stirring frequently until the rice is al dente. Stir in salt, black pepper, and Parmesan cheese. Remove from heat and let cool.

    Form the Balls

    Once the risotto is cool, mix in the eggs, parsley, and diced mozzarella. Take a handful of the mixture, shape it into a ball (about the size of a golf ball), and roll it in flour. Repeat until all mixture is used.

    Coat and Fry

    Roll each rice ball in breadcrumbs until fully coated. In a deep pot, heat olive oil to 350°F (175°C). Fry the arancini in batches until golden brown on all sides, about 3-4 minutes. Drain on paper towels.
