For the Grits

Method

For the Grits

  1. 1

    Boil Water

In a medium saucepan, bring 4 cups of water and 1 tsp of salt to a boil over medium-high heat.

  2. 2

    Add Grits

Once the water is boiling, gradually whisk in 1 cup of corn grits. Reduce heat to low and cook, stirring occasionally for about 20-25 minutes, until thickened.

  3. 3

    Finish Grits

Once the grits are thick and creamy, stir in 2 tbs of butter, 1 cup of cheddar cheese, and 1 tsp of black pepper. Mix until fully combined and creamy.

For the Shrimp

  1. 4

    Sauté Vegetables

In a large skillet, heat 2 tbs of olive oil over medium heat. Add 1 medium onion and 1 medium red bell pepper, diced. Cook until softened, about 5-7 minutes.

  2. 5

    Add Garlic

Add 3 minced cloves of garlic to the skillet and cook for another minute until fragrant.

  3. 6

    Cook Shrimp

Add 1 lb of peeled and deveined shrimp to the skillet. Sprinkle with 1 tbs of Cajun seasoning and 1 tsp of cayenne pepper. Cook until shrimp are pink and opaque, about 2-3 minutes.

  4. 7

    Add Broth and Finish

Pour in 1 cup of chicken broth and 2 tbs of lemon juice. Stir and let simmer for 3-5 minutes until the sauce slightly thickens.

  5. 8

    Garnish and Serve

Chop 2 stalks of green onions and sprinkle over the shrimp before serving over the prepared grits.
