Method

Preparing the Turkey

    Trim and Cube

    Trim the skin from the turkey breast (and pork belly, if using) and cut into 1-inch cubes. This helps create a crispy exterior while smoking.

    Season the Turkey

    In a large bowl, toss the turkey cubes with olive oil, salt, black pepper, garlic powder, paprika, and brown sugar until evenly coated.

Smoking the Turkey

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C). Use a mix of fruitwood and hickory for a balanced smoke flavor.

    Smoke the Turkey

    Place the seasoned turkey cubes (and pork belly, if using) in the smoker and cook for about 3 hours, or until they reach an internal temperature of 165°F (74°C).

Making the Glaze

    Combine Ingredients

    In a saucepan, combine honey, soy sauce, apple cider vinegar, sriracha, garlic powder, and black pepper. Bring to a simmer over medium heat.

    Thicken the Glaze

    Let the glaze simmer for about 10 minutes until it thickens slightly. Remove from heat.

Finishing the Turkey

    Toss with Glaze

    Once the turkey is done smoking, transfer the cubes to a large bowl and drizzle with the sweet and spicy glaze. Toss to coat evenly.

    Caramelize

    Return the glazed turkey to the smoker and cook for an additional 30-45 minutes, allowing the glaze to caramelize.

Preparing Collard Greens

    Cook the Greens

    In a skillet, heat olive oil over medium heat. Add chopped collard greens, salt, and black pepper. Sauté for about 5-7 minutes until tender.
