Prepare the Peaches
Wash the peaches thoroughly. Peel and slice them into thin wedges, discarding the pits.

Mix the Filling
In a large mixing bowl, combine the sliced peaches, sugar, lemon juice, cinnamon, cornstarch, and vanilla extract. Stir gently until the peaches are well coated. Let the mixture sit for about 10 minutes to allow the juices to release.

In another bowl, whisk together the flour, sugar, baking powder, and salt until well blended.

Preheat the Oven
Preheat your oven to 350°F (175°C).

Spread the peach filling evenly in a greased 9x13 inch baking dish. Pour the topping batter over the peaches, spreading it out as evenly as possible.
