Method

Filling Preparation

  1. 1

    Prepare the Peaches

Wash the peaches thoroughly. Peel and slice them into thin wedges, discarding the pits.

  2. 2

    Mix the Filling

In a large mixing bowl, combine the sliced peaches, sugar, lemon juice, cinnamon, cornstarch, and vanilla extract. Stir gently until the peaches are well coated. Let the mixture sit for about 10 minutes to allow the juices to release.

Topping Preparation

  1. 3

    Combine Dry Ingredients

In another bowl, whisk together the flour, sugar, baking powder, and salt until well blended.

  2. 4

    Add Wet Ingredients

Pour in the milk and melted butter into the dry mixture. Stir until just combined, being careful not to overmix.

Assembly and Baking

  1. 5

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 6

    Assemble the Cobbler

Spread the peach filling evenly in a greased 9x13 inch baking dish. Pour the topping batter over the peaches, spreading it out as evenly as possible.

  3. 7

    Bake

Bake in the preheated oven for 45-50 minutes, or until the topping is golden brown and a toothpick inserted into the topping comes out clean.

Serving

  1. 8

    Serve

Allow the cobbler to cool for about 10 minutes. Serve warm with scoops of vanilla ice cream on top.
