Preparation of Salmon Bites

Cut the Salmon
Begin by cutting the salmon fillet into bite-sized pieces, approximately 1 inch cubes.

Set Up Breading Station
In three separate shallow bowls, place the flour in one, the buttermilk and eggs (whisked together) in the second, and the cornmeal mixed with salt and pepper in the third.

Bread the Salmon
Dip each piece of salmon first in the flour, then in the buttermilk and egg mixture, and finally coat it with the cornmeal mixture, pressing lightly to adhere.
Frying the Salmon Bites

Heat the Oil
In a large, deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Salmon Bites
Carefully place the breaded salmon bites into the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and cooked through.

Drain Excess Oil
Once cooked, use a slotted spoon to remove the salmon bites from the oil and place them on a plate lined with paper towels to drain any excess oil.
