Prepare the Tomatoes
Wash the green tomatoes and slice them into 1/4 inch thick slices.

Set Up Breading Station
In three separate shallow dishes, place the flour in the first dish, the buttermilk mixed with beaten eggs in the second, and combine the cornmeal, salt, black pepper, and cayenne pepper in the third.

Bread the Tomatoes
Dip each tomato slice first into the flour, then into the buttermilk mixture, and finally coat with the cornmeal mixture. Ensure each slice is evenly coated.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.

Fry the Tomatoes
Carefully place the breaded tomato slices in the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.
Spicy Remoulade Sauce

Combine Ingredients
In a medium bowl, mix together the mayonnaise, Dijon mustard, hot sauce, chopped capers, minced garlic, paprika, salt, and black pepper until well blended.

Cover the remoulade sauce and refrigerate for at least 30 minutes to allow the flavors to meld.
