For the Fried Catfish

Prepare the Catfish
In a large bowl, soak the catfish fillets in buttermilk for at least 30 minutes to tenderize and flavor the fish.

Mix Dry Ingredients
In a separate bowl, combine the cornmeal, all-purpose flour, cajun seasoning, salt, and black pepper. Mix well to create a breading mixture.

Heat the Oil
In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Catfish
Remove the catfish fillets from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture until fully coated.

Fry the Catfish
Carefully place the coated catfish fillets into the hot oil. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
For the Po' Boy Assembly

Prepare the Hoagie Rolls
Slice the hoagie rolls lengthwise, being careful not to cut all the way through.

Spread the Mayonnaise
Spread a generous amount of mayonnaise on the inside of each hoagie roll.

Add the Fried Catfish
Place one fried catfish fillet into each hoagie roll.

Top with Lettuce and Tomatoes
Layer shredded lettuce and sliced tomatoes on top of the catfish in each roll.

Add Hot Sauce
Drizzle hot sauce over the toppings to add heat and flavor.

Serve
Close the hoagie rolls and serve immediately, accompanied by fries or chips if desired.
