Form patties

Place the ground beef in a large bowl. Sprinkle the salt and pepper over the meat and add Worcestershire sauce if using. Gently mix with your hands just until combined — do not overwork. Divide into 4 equal portions (about 4 oz each). Shape each portion into a patty about 3/4-inch thick and slightly wider than the buns. Make a shallow dimple in the center of each patty with your thumb to prevent puffing during cooking.

Preheat and oil

Preheat a cast-iron skillet or grill over medium-high heat. If using a skillet, add 1 teaspoon neutral oil and spread to coat the surface. The cooking surface should be hot enough that a drop of water sizzles immediately.

Cook patties

Place patties on the hot grill or skillet, leaving space between them. Cook undisturbed for 3–4 minutes until a good sear forms on the bottom. Flip once and cook 2–3 minutes for medium (internal temperature about 140–145°F / 60–63°C). In the last 1 minute of cooking, top each patty with a cheese slice, cover the pan or close the grill lid to melt the cheese. Adjust times for desired doneness.

Rest

Transfer cooked patties to a plate and let rest for 2–3 minutes to allow juices to redistribute.

Buns & Assembly

Prep vegetables

While patties cook, thinly slice the red onion into rings and the tomato into 1/4-inch slices. Wash and dry lettuce leaves. Keep pickles nearby.

Toast buns

Butter the cut sides of the buns evenly with the softened butter. Place buttered sides down on the hot skillet or grill for 30–60 seconds until golden and slightly crisp. Remove and keep warm.

Assemble burgers

Spread about 1 teaspoon mayonnaise on each bun bottom, 1 teaspoon ketchup and 1 teaspoon mustard on the top bun (or apply to taste). Place a lettuce leaf on the bottom bun, then add the rested cheeseburger patty. Top with 1–2 tomato slices, several onion rings, and two pickle slices. Cover with the top bun. Repeat for remaining burgers.

Serve

Serve immediately with fries or a side salad. Provide extra condiments at the table.
