Brewed Coffee

Measure and grind beans (if using whole beans)

Measure about 2 tablespoons of coffee beans per 8–12 fl oz cup (this recipe uses 2 TBS for ~12 fl oz). Grind beans to a medium consistency — similar to granulated sugar — if you are grinding fresh. If using pre-ground coffee, proceed to next step.

Heat water

Bring clean, fresh water to a temperature of about 195–205°F (just off a rolling boil). If you don't have a thermometer, bring to a boil and let sit for 30 seconds.

Prepare brewer

Place a paper filter in your drip basket, or prepare your French press/ pour-over cone according to manufacturer's instructions. Rinse paper filter with hot water if using one to remove paper taste and preheat the brewer. Discard rinse water.

Add coffee to brewer

Put the 2 tablespoons of medium-ground coffee into the filter or French press base. Level the grounds so they are evenly distributed.

Bloom (for pour-over or manual methods)

Pour just enough hot water (about twice the weight of the grounds — roughly 40–50 ml or 2–3 TBS) to wet all grounds evenly and let sit 30–45 seconds. This releases trapped gases and improves extraction. Skip this step for a drip coffee maker (the machine handles extraction timing).

Brew

Slowly pour the remaining hot water over the grounds (for pour-over) or start the drip machine. For French press, pour all water in, stir gently, place the lid with plunger up, and let steep for 4 minutes. For drip/pour-over, allow water to pass through the grounds fully.

Finish and serve

If using a French press, press the plunger down slowly and evenly. Pour the brewed coffee into a warm mug. Typical yield is about one 12 fl oz cup.

Optional Add-ins & Adjustments

Sweeten or lighten the coffee to taste. Add sugar, flavored syrup, milk, or cream in the quantities desired. A pinch (about 1/8 tsp) of salt can reduce bitterness if desired.

If making decaf, use decaffeinated beans or grounds and follow the same brewing process.

Store any leftover brewed coffee covered in the refrigerator for up to 48 hours. Reheat gently to avoid flavor degradation.
