Prepare bread and spread
Pat the butter at room temperature so it's spreadable. Evenly spread about 1/2 tablespoon of butter on one side of each of the four bread slices (total ~2 tbs used). On the opposite (unbuttered) side of two slices, spread 1/2 teaspoon Dijon mustard evenly on each; on the opposite side of the other two slices spread 1/2 teaspoon mayonnaise on each. The buttered sides will be the outsides that contact the pan.
Assemble cheese filling
In a small bowl combine shredded cheddar (1 1/2 cups) and shredded gruyère (1/2 cup). Season the mixture with 1/4 teaspoon black pepper and toss to combine. Divide the cheese evenly between the two sandwiches: place half the cheese mixture on the unbuttered side of two bread slices (the slices with mustard), spreading it to within about 1/4 inch of the edges. If using, add two tomato slices or two bacon slices on top of the cheese for each sandwich, then top each with the remaining cheese if desired for extra melt.
Close sandwiches
Top each assembled slice with the remaining bread slice, buttered side facing out. Press gently to flatten and help seal the edges slightly so the cheese is evenly distributed.
Cook on stovetop
Heat a large nonstick or cast-iron skillet over medium-low heat for about 1 minute. Place the first sandwich in the skillet, buttered side down. Cook for 3 to 4 minutes until the bottom is golden-brown and crisp. Meanwhile, place the second sandwich in the skillet if there's room (or cook sequentially). Reduce heat to low-medium if the bread is browning too quickly before the cheese melts. Butter the top (exposed) slice lightly with the remaining ~1 tablespoon of butter right before flipping, or add more as needed.
Flip and finish melting
Carefully flip the sandwich with a spatula and cook the second side for 2 to 3 minutes more, pressing gently with the spatula to encourage even contact and melt. If the cheese isn't fully melted after 2 to 3 minutes, reduce heat to low, cover the pan with a lid for 1 to 2 minutes to trap heat and finish melting without burning the bread.
Rest and slice
Remove sandwiches to a cutting board and let rest for 1 minute (this helps the cheese set slightly and prevents immediate runniness). Slice each sandwich in half diagonally or down the middle, wiping the knife between cuts for a clean presentation.
Serve
Serve immediately while hot and melty. Offer optional tomato soup, pickles, or extra black pepper at the table.
