Prepare fruit

Wash all fruit thoroughly. Hull and quarter the strawberries. Peel and dice the pineapple into roughly 1/2-inch cubes. Peel and dice the mango into similar sized pieces. Peel and slice or dice the kiwi. If grapes are large, halve them. Keep blueberries whole. Aim for similar-size pieces so the fruit mixes and portions evenly.

Place all prepared fruit in a large mixing bowl. Gently toss with a large spoon to combine, taking care not to crush softer berries.

Make dressing

In a small bowl, whisk together lime juice and honey (or agave) until honey is dissolved. Stir in chopped mint, orange zest (if using), a pinch of sea salt, and an optional pinch of black pepper to brighten the flavors.

Combine and chill

Pour the dressing over the mixed fruit. Gently toss until fruit is evenly coated. Taste and adjust: add a little more honey if you prefer sweeter, or another teaspoon of lime juice for more tang. Cover and refrigerate for at least 15 minutes to let flavors marry (up to 2 hours).

Serve

Before serving, gently toss again and garnish with a couple of mint leaves. Portion into 6 small cups or bowls.
