Cube Steaks & Marinade
Marinate steaks
Combine olive oil, Worcestershire sauce, minced garlic, smoked paprika, kosher salt and black pepper in a shallow dish. Add the cube steaks and turn to coat thoroughly. Cover and refrigerate for 30–60 minutes (or up to 4 hours) to allow flavors to penetrate.
Preheat grill
When ready to cook, preheat a gas or charcoal grill to medium-high (about 400–450°F / 200–230°C). Clean and oil the grates to prevent sticking.
Grill steaks
Remove steaks from marinade and let excess drip off. Place steaks on the hot grill. Cook 3–4 minutes per side for medium (time varies with thickness). Use tongs to flip once. For thinner 1/2" cube steaks, target total cook time 6–8 minutes. Internal temp for medium is about 145°F (63°C). Transfer steaks to a platter and tent with foil to rest 5 minutes.

Grill vegetables
You can grill vegetables alongside the steaks on direct heat or use a grill basket. Place onions and peppers directly on the grates and mushrooms in the basket or on a sheet. Grill peppers and onions 6–8 minutes, turning occasionally, until charred at edges and softened. Grill mushrooms 4–6 minutes until browned. Remove and keep warm.
Assembly & Toppings
Build the sandwiches
Place a lettuce leaf on the bottom bun, add a tomato slice, then the cheese-topped cube steak. Pile grilled peppers, onions and mushrooms on top of the steak. Spread mayo, mustard or your chosen sauce on the top bun if desired, then close the sandwich. Repeat for remaining servings.
Finishing
Serve the Dutchman Grilled Cube Steak sandwiches immediately while hot, with extra grilled vegetables on the side. Leftovers can be refrigerated up to 2 days; reheat gently to avoid overcooking the beef.
