Method
Burger Patties
Form patties
Divide the ground beef into two equal portions (about 8 oz each). Gently form each portion into a loose ball, then flatten into a patty about 3/4-inch thick and slightly wider than the buns. Do not overwork the meat—handle just enough to shape. Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.
Season
Season both sides of each patty with kosher salt and freshly ground black pepper. If using, lightly brush or sprinkle Worcestershire sauce on one side of each patty for extra flavor.
Preheat pan or grill
Heat a heavy skillet (cast iron preferred) or grill over medium-high heat until very hot. Add 1 tablespoon vegetable oil to the skillet and swirl to coat. If using a grill, oil the grates.
Cook patties
Place patties on the hot skillet or grill, seasoned-side up. Cook without moving for 3 to 4 minutes until a brown crust forms. Flip and cook on the second side for 2 to 3 minutes for medium doneness. Adjust time 1–2 minutes longer for medium-well. During the last 30–60 seconds of cooking, lay 2 slices of American cheese over each patty and cover the pan with a lid (or close the grill lid) to melt the cheese.
Buns & Finish
Toast buns
While the patties finish, split the burger buns. Spread about 1/2 tablespoon softened butter on each cut side. Place cut-side down in a hot skillet, on the grill, or under a broiler for 1–2 minutes until golden and lightly crisp. Watch carefully to avoid burning.
Assemble burgers
Spread 2 teaspoons mayonnaise on the top bun and 1 teaspoon mayonnaise with 1 teaspoon mustard on the bottom bun (or arrange ketchup/mustard as preferred). On the bottom bun place lettuce leaf, then the cheese-topped patty, then 2–4 pickle slices, a couple of thin tomato slices, and a few thin rings of red onion. Cap with the top bun.
