    Cook noodles

    Bring a large pot of salted water to a boil. Cook chow mein noodles according to package instructions until just tender (al dente), about 4-6 minutes depending on brand. Drain and rinse under cold water to stop cooking; toss with a small amount of oil to prevent sticking; set aside.

    Prepare shrimp and aromatics

    Pat shrimp dry with paper towels. If desired, lightly season with salt and pepper. Mince garlic and ginger; set aside.

    Stir-fry aromatics and shrimp

    Heat 1 tablespoon vegetable oil in a large wok or skillet over high heat. Add garlic and ginger; stir-fry until fragrant, about 30 seconds. Add shrimp in a single layer; cook for 2-3 minutes, turning once, until pink and opaque. Transfer shrimp to a plate.

    Stir-fry vegetables

    In the same pan, add another tablespoon of oil if needed. Add carrot and bell pepper; stir-fry for 2-3 minutes until just tender. Add snow peas and bean sprouts; cook for 1-2 more minutes.

    Combine and flavor

    Return shrimp to the pan. Add cooked noodles, soy sauce, oyster sauce, and sesame oil. Toss well to coat and heat through, about 1-2 minutes. If the mixture seems dry, splash in 1-2 tablespoons of water or stock to moisten.

    Finish and serve

    Stir in green onions. Taste and adjust seasoning with salt and pepper to taste. Optionally sprinkle with sesame seeds and serve hot.
