In Nepal, samosas are usually eaten as breakfast or late afternoon snacks. This dish replicates the samosa soup served in the Terai (southern flatlands) of Nepal; — chopped samosas in yellow bean soup with onion and cilantro.

    Prep the aromatics and samosas

    Rinse the yellow moong dal until the water runs clear. Peel and finely chop the onion; mince the garlic and ginger; dice the tomato. Cut the ready-made samosas into small bite-sized pieces.

    Sauté aromatics and spices

    In a large pot, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Add the onion and sauté until translucent. Add the garlic and ginger and cook until fragrant, about 1 minute.

    Flavor the base

    Add coriander seeds and turmeric to the pot; stir for about 30 seconds. Stir in the diced tomato and cook until softened and juicy.

    Add dal and liquid

    Pour in the rinsed yellow moong dal and 4 cups of water or vegetable stock. Bring to a boil, then reduce to a gentle simmer.

    Simmer until tender

    Simmer for 25-30 minutes, or until the dal is very tender and the soup has a creamy texture.

    Add samosas and finish

    Stir in the chopped samosa pieces and simmer for 3-5 minutes to heat through and meld the flavors. Season with salt to taste.

    Garnish and serve

    Remove from heat. Stir in fresh cilantro leaves and ladle the soup into bowls. Serve hot.
