Method

Brew Nepali Black Tea Base

  1. 1

    Boil water

In a pot, bring 480 ml water to a rolling boil.

  2. 2

    Steep tea bags

Add 2 black tea bags to the boiling water and reduce heat to a gentle simmer.

  3. 3

    Add cinnamon

Add 1 cinnamon stick to the simmering water to begin infusing.

  4. 4

    Add ginger

Stir in 1 inch piece of fresh ginger, sliced, to release warmth.

  5. 5

    Add cardamom

Add 2 crushed cardamom pods to the pot.

  6. 6

    Add cloves and steep

Add 2 whole cloves and simmer for 4–5 minutes. After steeping, remove from heat and strain the tea with a fine sieve.

Golden Turmeric Syrup

  1. 7

    Make turmeric infusion

In a small saucepan, whisk 0.5 tsp turmeric powder with 60 ml water and 0.125 tsp black pepper over low heat for 2 minutes to create a golden infusion.

  2. 8

    Sweeten infusion

Stir in 1 tbsp honey until fully dissolved; remove from heat.

Milk Base

  1. 9

    Warm milk

Gently heat 240 ml milk until steaming; do not boil.

  2. 10

    Add vanilla

Stir in 0.25 tsp vanilla extract into the warm milk.

Finish and Garnish

  1. 11

    Strain tea

Pour the brewed tea through a fine-mesh strainer into a mug to remove the spice particles.

  2. 12

    Add turmeric syrup

Stir in the golden turmeric syrup; start with 2–3 tablespoons and adjust to taste.

  3. 13

    Add milk

Pour the steamed milk into the tea-syrup mixture to create a latte texture.

  4. 14

    Garnish and adjust sweetness

Sprinkle 1 pinch nutmeg and 0.25 tsp cocoa powder on top; adjust sweetness if desired with extra honey.
