Preparation

    Make dragon fruit puree

    Cut ripe dragon fruit and scoop the flesh. Blend with 5–10 ml water until smooth. Strain if desired for a smoother texture. You should have about 30 ml of puree.

    Chill equipment

    Chill a rocks glass or coupe in the freezer or with ice. Rinse the shaker if desired and have it ready for mixing.

Mixing

    Combine ingredients in shaker

    Into a shaker, add 60 ml mezcal, 22 ml yellow Chartreuse, 15 ml Benedictine, 22 ml lime juice, 30 ml dragon fruit puree, and 15 ml simple syrup.

    Shake

    Fill the shaker with ice and shake vigorously for 12–15 seconds until well-chilled and slightly diluted.

Serving

    Strain and garnish

    Strain the shaken mixture into the prepared glass over fresh ice (or into a chilled coupe). Garnish with a dragon fruit slice or wheel and a lime wheel.
