    Heat oil in a heavy pot over medium heat. Add whole spices—cinnamon stick, green cardamom pods, whole cloves, and bay leaves—and fry until fragrant, about 1–2 minutes.

    Stir in minced garlic and grated ginger; cook for 2 minutes until the raw aromas mellow.
