Chow Mein - Chicken

    Cook noodles

    Cook chow mein noodles according to package directions until just shy of al dente. Drain, rinse briefly with cold water to stop cooking, then drain again and set aside.

    Season chicken

    Season chicken slices with a pinch of salt and white pepper.

    Cook chicken

    Heat 1 tablespoon vegetable oil in a large wok over high heat. Add chicken and stir-fry until cooked through and lightly browned, about 4-6 minutes. Remove and set aside.

    Aromatics

    In the same wok, add remaining oil. Add onion and garlic-ginger paste; stir-fry until fragrant, about 1-2 minutes.

    Add vegetables

    Add carrot, bell pepper, and cabbage. Stir-fry until vegetables are crisp-tender, about 3-4 minutes.

    Add sprouts and seasonings

    Stir in bean sprouts and green onions. Add soy sauces, oyster sauce, sugar, white pepper, and salt. If using, add chili flakes. Stir to coat and combine.

    Combine noodles and wok

    Return chicken to the wok. Add cooked noodles and 2 tablespoons water or stock; toss vigorously to coat noodles and heat through.

    Finish and serve

    Drizzle sesame oil, taste, and adjust salt or soy as needed. Garnish with sesame seeds if using. Serve hot.
