ChowMein

Method

ChowMein

  1. 1

    Cook noodles

Cook chow mein noodles in boiling water according to package directions until just tender. Drain and rinse with cold water, then toss with 1 teaspoon sesame oil to prevent sticking.

  2. 2

    Make sauce

In a small bowl, whisk together 1 tablespoon soy sauce, 2 tablespoons oyster sauce, 1 tablespoon hoisin sauce, 1 teaspoon sugar, 1 teaspoon sesame oil, and 60 ml water to create the sauce.

  3. 3

    Marinate chicken

In a bowl, combine chicken with 2 tablespoons soy sauce, 1 tablespoon cornstarch, 0.25 teaspoon salt, and 0.25 teaspoon black pepper. Toss to coat and marinate for 10 minutes.

  4. 4

    Stir-fry chicken

Heat 2 tablespoons vegetable oil in a large skillet or wok over high heat. Add marinated chicken and stir-fry until cooked through and lightly browned, about 4-6 minutes. Remove from wok and set aside.

  5. 5

    Aromatics

Add garlic and ginger to the wok and stir-fry for about 30 seconds until fragrant.

  6. 6

    Vegetables

Add carrots and cabbage; stir-fry for 2-3 minutes until they begin to soften.

  7. 7

    Combine

Return chicken to the wok. Add noodles and prepared sauce; toss to combine and cook for 1-2 minutes until heated through.

  8. 8

    Finish

Stir in bean sprouts and green onions; cook for another 1 minute. Season with salt and pepper if needed.

  9. 9

    Serve

Serve hot, garnished with extra green onions if desired.
