    In a large bowl, whisk together the buckwheat flour and salt until evenly distributed.

    Stir in the oil, if using, until the flour resembles coarse crumbs.

    Gradually add warm water, mixing as you go, until a soft, pliable dough forms. You may not need all the water; add a little at a time.

    Knead the dough on a lightly floured surface for 2–3 minutes until smooth. If the dough feels dry, sprinkle in a few drops of water.

    Cover the dough and let it rest for 15–20 minutes to hydrate the flour.

    Preheat a heavy skillet or tawa over medium-high heat.

    Divide the dough into 6 equal portions and roll each into a ball.

    Lightly dust the work surface with buckwheat flour and roll each ball into a thin circle about 6–7 inches in diameter.
