Cooking Instructions
- 1
Prepare the Glaze
In a small bowl, mix together soy sauce, honey, Sriracha sauce, and lime juice to create the glaze.
- 2
Marinate Mahi Mahi
Place the mahi mahi fillets in a shallow dish and pour half of the glaze over them. Let marinate for at least 15 minutes.
- 3
Prepare the Asparagus
While the mahi mahi is marinating, wash and trim the asparagus. Heat 1 tablespoon of olive oil in a skillet over medium heat and sauté the asparagus for about 5-7 minutes until tender. Season with salt and pepper.
- 4
Cook the Mahi Mahi
In the same skillet, add the remaining tablespoon of olive oil. Remove mahi mahi from the marinade and add to the skillet. Cook for about 4-5 minutes on each side, brushing with the remaining glaze, until the fish is cooked through and flakes easily with a fork.
- 5
Prepare the Salsa
In a bowl, combine the diced pineapple and mango. Mix gently and season with a pinch of salt and lime juice.
- 6
Serve
Plate the sautéed asparagus, place the mahi mahi on top, and add a generous scoop of pineapple salsa. Drizzle with any remaining glaze.
