In a small saucepan, combine equal parts sugar and water with a few sprigs of rosemary. Heat until the sugar dissolves, then let it steep for 30 minutes. Strain and cool.

Mix the Cocktail
In a cocktail shaker, combine the Grey Goose vodka, white peach puree, rosemary simple syrup, and lemon juice. Fill the shaker with ice and shake well for about 15 seconds.

Strain the mixture into a glass filled with ice. Top with soda water and gently stir to combine.

Add fresh peach slices and a sprig of rosemary as garnish. Serve immediately.
