Prepare Ingredients
Gather all the ingredients. Grate the Parmesan cheese and set aside. Cut the pancetta or guanciale into small strips.

Cook Pasta
Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve a cup of pasta water, then drain the pasta.

Cook Pancetta
In a large skillet over medium heat, cook the pancetta or guanciale until crispy. Remove from heat.

Combine Eggs and Cheese
In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper.

Mix Pasta with Pancetta
Add the hot pasta to the skillet with the cooked pancetta. Toss to combine.

Create Sauce
Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add a little reserved pasta water to loosen it.

Serve
Serve immediately with additional Parmesan cheese and black pepper on top.
