Fill a copper mug or highball glass with ice cubes.

In a cocktail shaker, combine the tequila, fresh lime juice, lavender simple syrup, and bitters. Fill the shaker with ice and shake well for about 15 seconds.

Strain the mixture into the prepared glass filled with ice. Top with ginger beer.
