Mix the Filling
In a mixing bowl, combine the sautéed onion and mushroom mixture with crumbled chorizo and cream cheese. Mix until well combined.

Fill the Mushroom Caps
Take each mushroom cap and fill it generously with the chorizo filling. Set aside.

Prepare for Frying
In one bowl, place flour seasoned with salt and pepper. In another bowl, place breadcrumbs. Dredge each filled mushroom cap in flour, then dip in a bit of heavy cream, and finally coat with breadcrumbs.

Heat the Oil
In a deep pot, heat oil to 350°F (175°C) for frying.

Fry the Mushroom Caps
Carefully place the coated mushroom caps in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
