Method
Prepare Olio Nuovo Wash (advance, yields ~150 ml washed spirit)
Separate
Let the jar rest undisturbed for 4–6 hours at room temperature. The oil will largely re-coalesce. Carefully decant the spirit layer (top or middle clear layer) into a clean bottle, leaving most of the oil behind. If cloudy, clarify by freezing briefly (10–20 minutes) and decanting again or by using a coffee filter.
Store
Label and refrigerate the washed spirit. Use within 2–3 weeks for best aromatics. This recipe uses approximately 30 ml of washed spirit (2 oz) per cocktail.
Make Lactic Component
If using yogurt whey: strain plain full-fat yogurt through cheesecloth for several hours to collect whey. If using lacto-fermented whey, ensure it's bright and not overly funky. Measure 0.25 oz (about 7 ml) for one cocktail. Keep cold.
Build the Anatolian Martini
Combine Spirits and Modifiers
In a mixing glass filled with plenty of ice add 2 oz of the olio nuovo-washed gin or vodka, 0.5 oz dry French vermouth, 0.25 oz green/olive vermouth, 0.25 tsp house olive brine and 0.25 oz lactic whey. The tiny amount of whey gives a soft lactic note without curdling when cold; keep quantities exact.
Stir Gently
Stir the mixture gently for 20–30 seconds until well chilled and slightly diluted (aim for about 25–30% dilution by eye). Avoid vigorous shaking to preserve the delicate oil aromatics and to prevent emulsifying the whey into a froth.
Rinse with Olive Oil (optional)
If you want a stronger olio nuovo aroma, add 0.25 tsp extra virgin olive oil to a small measure, swirl in the chilled glass to coat the inside, then discard any excess (or leave a trace) before straining the cocktail in. This step is optional — the washed spirit should provide the primary olive note.
Strain and Top with Sparkle
Double-strain the stirred mixture into the chilled glass to remove ice shards. Top gently with 1 oz chilled dry sparkling wine poured down the side to preserve effervescence and light foam.
Notes and Safety
If the whey appears curdled after combining, the drink may be too warm or the whey too acidic; stir colder or reduce whey next time. Adjust olive brine to taste — the recipe suggests a whisper (0.25 tsp) but some palates prefer 0.5 tsp. The olio nuovo wash provides green, peppery olive aromatics; test proportions with a small trial batch.
