Ravioli Dough

    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs using a fork until a dough begins to form.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Filling

    Mix the Filling

    In a bowl, combine ground veal, ricotta cheese, Parmesan cheese, egg yolk, minced garlic, chopped parsley, salt, and black pepper. Mix until all ingredients are well incorporated.

Tomato-Basil Sauce

    Sauté Aromatics

    In a saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute.

    Add Tomatoes and Basil

    Add the canned crushed tomatoes, chopped basil, salt, and black pepper to the saucepan. Simmer for about 15-20 minutes, allowing the flavors to meld.

Assembly and Cooking

    Roll Out Dough

    After the dough has rested, divide it into quarters. Roll out one piece into a thin sheet using a pasta machine or rolling pin, keeping the remaining dough covered.

    Fill the Ravioli

    Place small mounds of the filling (about 1 tsp each) along one half of the rolled-out dough. Fold the other half over and press down around the filling to seal. Cut into individual ravioli using a knife or pasta cutter.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Add the ravioli in batches and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

    Serve

    Plate the cooked ravioli and spoon the tomato-basil sauce over the top. Garnish with additional basil and Parmesan cheese if desired. Enjoy!
