    Prepare sweet potatoes

    Place peeled and 1-inch cubed sweet potatoes into a large pot and cover with cold water by about 1 inch. Add 1/2 teaspoon of the kosher salt to the water to season from within.

    Cook sweet potatoes

    Bring the pot to a rolling boil over high heat, then reduce to a medium simmer. Cook until cubes are very tender and easily pierced with a fork, 12–18 minutes depending on size. Drain thoroughly in a colander and let sit for 1–2 minutes to allow excess steam to escape (this helps prevent watery mash).

    Warm dairy and flavorings

    While potatoes drain, warm the milk, butter, and maple syrup together in a small saucepan over low heat or in a microwave-safe bowl until butter is melted and mixture is hot but not boiling (about 1–2 minutes). Stir in ground cinnamon and nutmeg to bloom the spices. If using orange zest, have it ready.

    Mash to desired texture

    Return drained sweet potatoes to the warm pot or to a large bowl. Use a potato masher for a slightly rustic texture or a ricer for a smoother finish. Mash until most lumps are gone but before it becomes gluey (overworking makes mash gummy).

    Combine and season

    Pour the warmed milk/butter/maple mixture over the mashed sweet potatoes. Add sour cream, the remaining 3/4 teaspoon kosher salt, and black pepper. Stir gently with a wooden spoon or rubber spatula until fully incorporated and creamy. Taste and adjust seasoning: add more salt, pepper, or maple syrup if you prefer sweeter mash. Fold in orange zest if using.

    Finish and serve

    Transfer mash to a warmed serving bowl. Dot with an extra 1/2 tablespoon of butter if desired and sprinkle chopped chives or parsley over the top. Serve immediately. If making ahead, cover and refrigerate; reheat gently in a saucepan over low heat with a splash of milk, stirring until warmed through.
