    Cook aromatics and spinach

    Preheat a large skillet over medium heat and add 1 tablespoon olive oil. Add the diced onion and sauté 4–5 minutes until translucent. Add the minced garlic and cook 30 seconds until fragrant. Add the chopped spinach in batches, stirring until wilted and any excess moisture evaporates, about 4–6 minutes total. Remove from heat and let cool 5 minutes.

    Combine filling

    Transfer the cooled spinach mixture to a large bowl. Add the softened cream cheese, sour cream, crumbled cotija (or feta), 1 cup shredded Monterey Jack (reserve 1 cup for topping), ground cumin, chili powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Stir until well combined and smooth. Taste and adjust seasoning as needed.

Enchilada Sauce & Assembly

    Prepare tortillas

    Preheat oven to 375°F (190°C). Pour 2 cups enchilada sauce into a shallow bowl or pie plate. In a separate small skillet, warm 1 tablespoon vegetable oil over medium heat. Quickly fry each tortilla 10–15 seconds per side just until pliable (or warm them in a damp towel in microwave for 30 seconds) and transfer briefly into the enchilada sauce to lightly coat — this prevents cracking during rolling.

    Fill and roll enchiladas

    Place a tortilla on a work surface, spoon approximately 3–4 tablespoons of the spinach-cheese filling down the center, and roll tightly. Place seam-side down in a 9x13-inch baking dish. Repeat with remaining tortillas and filling. If you have extra filling, spoon it between rolled enchiladas.

    Top and bake

    Pour any remaining enchilada sauce evenly over the rolled enchiladas. Sprinkle the reserved 1 cup shredded cheese on top. Cover the dish with foil and bake in the preheated oven 15 minutes. Remove foil and bake an additional 5–8 minutes until cheese is melted and bubbly and edges begin to brown slightly.

    Garnish and serve

    Remove from oven and let rest 5 minutes. Garnish with chopped fresh cilantro and serve with lime wedges on the side. Optionally serve with extra sour cream or salsa.
