Method

Preparation

    Freeze meat and fat until very cold but not solid — about 30–45 minutes if starting from refrigerator-cold. Cold meat helps the emulsion and keeps cheese from melting during mixing.

    If using whole peppers, remove stems and seeds from jalapeños (keep some seeds if you want more heat). Finely dice and place in small bowl; toss with 1/2 tsp salt and let sit 5–10 minutes, then pat dry to remove excess moisture.

    Cube cheddar and pepper-jack cheeses into roughly 1/4" pieces. Keep cold in fridge or briefly return to freezer (5–10 minutes) before mixing to prevent smearing.

    Soak natural hog casings in warm water for 30 minutes, then flush with running water to remove salt and debris. Keep in a bowl of clean water until ready to use.

Seasoning & Mixing

    In a large bowl, combine kosher salt, black pepper, white pepper, dry mustard, paprika, garlic powder, onion powder, brown sugar, crushed red pepper flakes and cayenne. Mix spices thoroughly.

    Place chilled ground meat and fat into the mixing bowl. Sprinkle the spice mix evenly over the meat.

    Add 1/4 cup of the ice water to the meat. Using your hands or a stand mixer with paddle attachment on low speed, mix until the spices are evenly distributed — about 1–2 minutes. If using a stand mixer with paddle, mix 30–45 seconds on low, then increase to medium-low and continue 30–60 seconds to develop a tacky texture.

    Divide the seasoned meat into two equal portions (for the two flavor variations). Keep portions cold.

    Jalapeño & Cheddar Portion

    Gently fold the diced cold cheddar and the drained diced jalapeños into one portion. Do not overmix — fold just until evenly distributed so the cheese stays in pieces.

    Pepper-Jack Portion

    Gently fold the diced pepper-jack into the second portion until evenly distributed. Keep mixture cold.

    If you prefer uniform links without large pockets of cheese, chill mixtures 20–30 minutes before stuffing; very cold mixtures bind better.

Stuffing

    Set up a sausage stuffer or use a stand mixer sausage attachment. Load one mixture into the stuffer barrel, and fit the prepared hog casing onto the funnel, leaving a 6" tail.

    Hold the casing and begin feeding the meat, applying steady gentle pressure to avoid air pockets. Aim for links about 4–5" long. Twist links between each one, alternating directions for consistent twisting.

    If air pockets form, prick them gently with a sterile needle and press the meat to remove air.

    Tie off the end of the casing when finished. Repeat for the second mixture and any remaining casings.

Cooking & Finishing

    For fresh-cooked sausages: heat a skillet or grill to medium heat and brush with 1 tbsp neutral oil. Cook sausages over medium indirect heat, turning occasionally, until internal temperature reaches 160°F (71°C) for pork or 160–165°F (71–74°C) for beef — about 12–18 minutes depending on thickness. Avoid very high heat to keep cheese from melting out.

    For smoked sausages: cold smoke at 80–100°F for 2 hours (optional), then increase smoker temperature to 225°F and smoke until internal temperature reaches 160°F (71°C), about 1–2 hours depending on size.

    After cooking, rest sausages 5 minutes. If desired, quickly sear on a hot griddle for 30–60 seconds per side for color.

    Store leftovers refrigerated up to 3–4 days or freeze up to 3 months, wrapped tightly.

Safety & Notes

    Always keep meat and cheese cold during processing to minimize bacterial growth and prevent cheese from smearing. Sanitize surfaces and equipment after use.

    Adjust heat by increasing or decreasing jalapeño amount and seeds or crushed red pepper. If using lean beef, add additional fat to reach roughly 20–25% fat for juicy links.
