    Prepare potatoes

    Wash potatoes thoroughly. Cut into 3/4- to 1-inch chunks (leave skins on for texture).

    Cook potatoes

    Place potato chunks in a large pot and cover with cold water by about 1 inch. Add 1/2 teaspoon salt. Bring to a simmer over high heat, then reduce to a gentle boil and cook until potatoes are fork-tender, 10–15 minutes depending on size. Test by piercing a chunk; it should yield without falling apart.

    Drain and dry

    Drain potatoes in a colander and return to the still-warm pot. Let steam for 2–3 minutes to dry off excess moisture. While still warm, gently toss or fold to smooth edges (this helps dressing adhere).

    Cook eggs

    Place eggs in a small saucepan and cover with cold water by 1 inch. Bring to a gentle boil, then remove from heat and cover. Let sit 10–12 minutes for hard-cooked yolks. Transfer eggs to an ice bath for 5 minutes, then peel and chop coarsely.

    Prep vegetables

    Meanwhile, dice celery, slice green onions, dice pickles (or measure relish), and chop parsley. If using bacon, crisp it in a skillet, drain on paper towels, and chop once cool.

    Make dressing

    In a medium bowl whisk together mayonnaise, Greek yogurt (or sour cream), Dijon mustard, apple cider vinegar, sugar (if using), 1 teaspoon kosher salt, and 1 teaspoon black pepper until smooth and slightly glossy.

    Taste and adjust

    Taste the dressing and adjust seasoning: add a pinch more salt or up to 1/2 teaspoon more sugar or 1/2 teaspoon more vinegar according to preference.

Assemble & Finish

    Combine salad

    In a large mixing bowl combine warm potato chunks, chopped eggs, diced celery, sliced green onions, diced pickles, and chopped parsley. Pour the dressing over the warm potatoes (warm potatoes absorb flavor better). Gently fold until everything is coated, taking care not to mash the potatoes.

    Chill and meld flavors

    Cover and refrigerate at least 1 hour (preferably 2–4 hours) to let flavors meld. If you need to serve immediately, let sit at room temperature 20–30 minutes after dressing to allow flavors to integrate.

    Before serving, taste and adjust salt and pepper. If using, stir in chopped bacon. Spoon onto a platter and garnish with a light sprinkle of smoked paprika and small dollops or a thin swirl of whole-grain mustard for country-style appearance. Serve chilled or at cool room temperature.
