    Prepare beans

    Preheat the oven to 350°F (175°C). Drain and rinse the canned navy beans; set aside. If you reserved any liquid from the beans, measure about 1 cup to use later in the sauce (or use plain water).

    Cook bacon

    Heat a large skillet over medium heat. Add the diced bacon and cook, stirring occasionally, until the fat renders and bacon is crisp-tender, about 6–8 minutes. Remove most of the bacon pieces with a slotted spoon and transfer to a plate lined with paper towel, leaving about 2 tablespoons of bacon fat in the pan. Reserve the crisp bacon for later.

    Sauté aromatics

    Add the diced onion to the bacon fat in the skillet. Sauté over medium heat until soft and translucent, about 6 minutes. Add the minced garlic and cook for 30–45 seconds until fragrant, taking care not to burn it.

    Build the sauce

    Lower the heat to medium-low. Stir in the tomato sauce, ketchup, brown sugar, molasses, apple cider vinegar, Dijon mustard, Worcestershire sauce, smoked paprika, black pepper, kosher salt, and chopped chipotle (or hot sauce). Mix thoroughly to dissolve the brown sugar and combine the flavors.

    Adjust consistency

    Pour in about 1 cup of water or reserved bean liquid and bring the mixture to a gentle simmer. Taste and adjust seasoning: add more salt for saltiness, more vinegar for brightness, or more brown sugar/molasses for sweetness. Simmer 3–4 minutes so flavors round out.

    Combine beans and sauce

    In a medium ovenproof baking dish (about 2–3 quart), place the drained beans. Pour the hot sauce and onion mixture over the beans and gently stir to combine, taking care not to mash the beans. Fold in half of the reserved crisp bacon pieces (reserve the rest for topping).

    Top and bake

    Dot the surface with the small pats of unsalted butter. Cover the dish loosely with foil and bake in the preheated 350°F oven for 30 minutes. After 30 minutes, remove the foil and bake an additional 15–20 minutes until the sauce is thickened and bubbling and the top is slightly caramelized. If you prefer a crustier top, broil 1–2 minutes—watch closely to avoid burning.

    Remove from oven and let rest 5 minutes. Sprinkle the remaining reserved bacon over the top and garnish with chopped fresh parsley. Stir gently before serving or serve straight from the dish.
