    Prepare the Marinade

    In a bowl, combine minced garlic, soy sauce, lemon or calamansi juice, crushed black peppercorns, oregano, thyme, salt, and bay leaves to create the marinade.

    Marinate the Pork

    Place the pork shoulder in a large resealable plastic bag or container. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the container and refrigerate for at least 8 hours or overnight for best results.

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Roast the Pork

    Remove the pork from the marinade and let it come to room temperature. Place it on a roasting rack in a roasting pan. Brush the pork with vegetable oil. Roast in the preheated oven for approximately 4 to 5 hours, or until the internal temperature reaches 195°F (90°C) and the skin is crispy.

    Rest and Serve

    Once done, remove the pork from the oven and let it rest for at least 30 minutes before carving. Serve with your favorite dipping sauce.
