    Sear the Oxtail

    Heat olive oil in a large pot over medium-high heat. Season oxtail with salt and black pepper. Sear the oxtail pieces until browned on all sides, about 8-10 minutes. Remove and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, carrots, and celery. Cook until softened, about 5-7 minutes. Stir in garlic and cook for another minute.

    Add Flavorings

    Add tomato paste and cook for 2 minutes. Pour in red wine, scraping the bottom of the pot to deglaze. Bring to a simmer.

    Braise the Oxtail

    Return the seared oxtail to the pot. Add beef broth, bay leaves, and thyme. Bring to a boil, then reduce heat to low. Cover and simmer for 3-4 hours, or until oxtail is tender.

    Final Seasoning

    Remove the pot from heat. Discard bay leaves. Adjust seasoning with salt and black pepper if needed. Serve hot.
