    Prepare the Tart Crust

    In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the egg yolk and ice water until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

    Pre-bake the Crust

    Preheat the oven to 350°F (175°C). Roll out the chilled dough on a floured surface and fit it into a tart pan. Prick the bottom with a fork and bake for 20-25 minutes or until golden. Allow to cool.

    Prepare the Caramel

    In a saucepan over medium heat, combine 1 cup of granulated sugar and 1/4 cup of water. Stir until sugar dissolves, then stop stirring and let it boil until it turns a deep amber color. Remove from heat and carefully add 1/2 cup of heavy cream. Stir until smooth. Let cool slightly.

    Assemble the Tart

    Arrange fresh fruit of your choice (such as berries, kiwi, and banana) on the cooled tart crust. Drizzle the caramel sauce over the fruit.

    Slice the tart and serve immediately, drizzling extra caramel as desired.
