Preparation

    Soak Cedar Plank

    Soak a cedar plank in water for at least 1 hour to prevent it from burning on the grill.

    Prepare Baby Potatoes

    Preheat the oven to 400°F (200°C). Wash and halve the baby potatoes, then toss them with olive oil, salt, and fresh herbs. Spread them on a baking sheet.

Cooking

    Roast Potatoes

    Place the baking sheet with baby potatoes in the preheated oven and roast for about 25-30 minutes, or until they are golden and tender.

    Make Maple Dijon Butter

    In a small saucepan, melt the unsalted butter over low heat. Stir in the maple syrup, Dijon mustard, minced garlic, lemon juice, salt, and black pepper until well combined.

    Prepare and Grill Salmon and Prawns

    Preheat the grill to medium-high heat. Place the soaked cedar plank on the grill for about 3-5 minutes until it starts to smoke. Place the salmon fillets and prawns on the cedar plank. Brush generously with the maple Dijon butter.

    Grill

    Close the grill lid and cook for about 15-20 minutes, or until the salmon is cooked through and the prawns are pink and opaque.

Serving

    Plate and Serve

    Carefully remove the cedar plank from the grill. Serve the grilled salmon and prawns alongside the roasted baby potatoes. Drizzle any remaining maple Dijon butter over the top.
