Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks. This will help it cook evenly.

Make the Rub
In a small bowl, mix together paprika, brown sugar, cumin, salt, and black pepper to create a rub. Rub this mixture all over the pork pieces.

Sear the Pork
Heat a large skillet over medium-high heat. Add a little oil and sear the pork pieces on all sides until browned (about 3-4 minutes per side).

Set Up Slow Cooker
Place the seared pork in the bottom of a slow cooker. Add chopped onions, minced garlic, apple cider vinegar, and water.

Cook the Pork
Cover the slow cooker and cook on low for 8-10 hours or until the pork is tender and shreds easily with a fork.

Shred the Pork
Once cooked, remove the pork from the slow cooker and place it on a cutting board. Use two forks to shred the meat.
