Method

Preparing the Fries

  1. 1

    Cutting the Potatoes

Wash and peel the russet potatoes. Using a sharp knife or a mandoline, cut the potatoes into thin strips, about 1/4 inch wide.

  2. 2

    Soaking the Potatoes

Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch. This helps achieve a crispier texture.

  3. 3

    Drying the Fries

After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

  4. 4

    Frying the Fries

In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Carefully add the fries in batches, being sure not to overcrowd the pot. Fry for 4-6 minutes or until golden brown and crispy.

  5. 5

    Seasoning

Remove the fries from the oil using a slotted spoon and place them on a paper towel-lined plate. While they are still hot, sprinkle with salt to taste.

Making the Pincho Sauce

  1. 6

    Mixing the Ingredients

In a medium bowl, combine the mayonnaise, ketchup, garlic powder, cayenne pepper, and lime juice. Stir well until all ingredients are fully blended.

  2. 7

    Adding Fresh Herbs

Fold in the chopped fresh cilantro into the sauce mixture, ensuring it is evenly distributed.

Plating and Garnishing

  1. 8

    Serving the Fries

Place a generous portion of fries on a serving plate. Drizzle or serve the pincho sauce on the side.

  2. 9

    Garnishing

Sprinkle sesame seeds and chopped parsley over the fries for added flavor and presentation.
