Preparing the Salmon

    Marinate the Salmon

    In a small bowl, mix the olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure the fillets are well coated. Cover and refrigerate for at least 30 minutes.

    Preheat the Grill

    While the salmon is marinating, preheat your grill to medium-high heat.

    Grill the Salmon

    Remove the salmon from the marinade and place it on the preheated grill. Cook for about 4-5 minutes on one side. Carefully flip the fillets and grill for another 4-5 minutes, or until the salmon flakes easily with a fork.

    Once cooked, remove the salmon from the grill and let it rest for a few minutes before serving.

    While the salmon is resting, wash and cut the asparagus, bell pepper, and zucchini into bite-sized pieces.

    In a skillet, heat the olive oil over medium heat. Add the prepared vegetables, season with salt and black pepper to taste, and sauté for about 5-7 minutes or until tender-crisp.

    On a serving plate, place a grilled salmon fillet alongside the sautéed seasonal vegetables. You can drizzle with additional lemon juice for extra flavor if desired.
